Baked Eggplant Slices
1 medium eggplant peeled and sliced 1/2" thick
Sprinkle eggplant with salt, let stand 20 min, then pat dry.
1/2 cup mayonnaise
1/2 green onion, finely minced
1 cup soda cracker crumbs
1/2 cup grated parmesan cheese
Mix mayo and green onion.
Mix cracker crumbs and cheese.
Spread mayo mixture on both sides of eggplant.
Dip slices into crumb-cheese mixture.
Place on cookie sheet and bake at 375F till golden, about 20 min.
Serving Size : 4
These are good and easy to make. I ate mine with fresh sliced tomato on top.

Never having cookied eggplant before, it was an easy recipe and very delicious. The mayo and crumbs really crisped and flavor was wonderful.
