Baigan (Eggplant) Fry

2-3 eggplants
1 tablespoon coriander powder
2 pinches turmeric powder
1/2 teaspoon tamarind powder
red chilli powder to taste
salt to taste
oil for frying

Cut the eggplants in medium sized flat pieces.

Make slits on white side of eggplant and rub salt on it.

Heat oil and fry the eggplant pieces on a very slow flame until golden.

Remove from oil and sprinkle all the spices on top just before serving.
