Eggplant Chili

6 tablespoons olive oil
unpeeled medium eggplant, cut into 1/2-inch cubes
1 cup onion, yellow; coarsely chopped
2 garlic cloves; crushed
1 cup green pepper; cut into 1/2 inch cubes
2 cup tomatoes, canned; crushed
1 tablespoons chili powder
1 1/2 teaspoons cumin
1 1/2 teaspoons oregano; dried
1/4 cup parsley, fresh; minced
salt and pepper to taste
2 cups beans, canned (kidney and/or garbanzo); drained

Heat olive in a large skillet. Add zucchini, onion, garlic and green pepper. Sauté 10 minutes until softened.

Transfer to a saucepan and add tomatoes, chili powder, cumin, oregano, parsley, salt and pepper. Cook over low heat, uncovered, for 10 minutes. Stir in beans and cook 10 minutes more on low heat. Adjust seasonings.

Serve chili rolled up in a warm flour tortilla or on a bed of brown rice.

Serves 4.


The recipe ingredients doesn't list zucchini, but it's mentioned in the recipe -- but the recipe doesn't list eggplant, so I'm going to assume you should substitute 'eggplant' where you see 'zucchini'.

LOVED this recipe!! We are huge chili fans but often find the traditional meat chilis too heavy. This was perfect. But it did not serve 4; there are only 2 of us :)

I don't get it, when do you add eggplant? Where does zucchini come in? Read your ingredients and then directions. I think there is a mistake.

I got the gist of your recipe, because I do quite a bit of cooking; however, you need to do a re-do on this recipe because you have listed ingredients in the instructional part of the recipe that are not listed in the list of ingredients. I cut up the eggplant, then sauteed it with a shallot, minced onion and garlic, added diced tomatoes. I tweeked the recipe by adding to it zuccini & yellow squash. It was great.

I've seen a few recipes for Eggplant Chili or Spicy Chili. Some have cube & roast eggplant in oven then to saute also zucchini, garlic, onion & bell peppers in olive oil stockpot then add remaining ingredients to simmer as chili. I'm adding both eggplant & zucchini, but do know sometimes if eggplant is

Highest praise for this recipe. Only variations were: added chopped chicken and spicy black beans instead of the other beans. Absolutely delicious with a little bit of kick.
