Aubergine Bake

2 large tomatoes, sliced
1 aubergine, thinly sliced
1 large onion, sliced grated
grated cheese
1 small carton plain yogurt
breadcrumbs
herbs e.g. basil or oregano
1. Grease ovenproof baking dish with vegetable oil. Place in it one layer of tomatoes, covered by a layer of onion, then aubergine, adding salt, pepper and herbs to taste.
2. Repeat process. Cover with yogurt, cheese then breadcrumbs.
3. Bake in hot oven 375 F for about 40 minutes.
