Chinese Eggplant with Hoisin Sauce

2 tablespoons sesame oil
4 chinese eggplant, cut into 1/4 inch slices
2 tablespoons hoisin sauce

In a wok or fry pan, heat sesame oil until hot. Add Chinese eggplant, cooking until tender. Toss with Hoisin sauce.

I did cook the egglant in the oven rather than in the wok.

I did something similar with the oven as well. Toss the eggplant with thin slivers of onion in a marinade of soy sauce, rice vinegar, garlic, sesame oil and small amount of sugar. Cover with foil and bake 45 min. approx. Once you remove from oven toss with hoisin- you don't need much. Delicious beyond words!

Thank you yvonne for your recommendation. I did a similar thing, I cubed the eggplant, baked it with thinly sliced onions, garlic, sesame oil, salt, brown sugar, but I used balsamic vinegar and I covered it all with sesame seeds, turned out amazing. I sauteed red peppers, zucchini, and carrots with some chili flakes and a little salt and soy, then added the baked eggplant and a little hoisin. I added this to some brown and black rice I cooked with garlic and soy sauce, and it was outstanding.

This will be my first eggplant recipe. Do you peel the eggplant? Also, it would be helpful if at least approimate measures were listed for the marinade. How much is a small amount of sugar. I've been searching and this recipe looks the closest to one I ate in a Chinese place some years back. I've never forgotten how delicious it was. Thank you so much. After I make it I will post my comments.
