Stir Fried Eggplant

1 pound long eggplant
1/2 teaspoon fresh chili
1 tablespoon fresh ginger
1 tablespoon fresh minced garlic
3/4 cup water
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame seeds
2 tablespoons oil
1/2 cup chopped red pepper

Cut eggplant in half lengthways. Then cut across in 1/2 inch slices. Place in bowl. Mix in minced chili, ginger and garlic.

In measuring cup mix the water, oyster sauce and soy sauce.

In large dry skillet lightly toast sesame seeds on low heat and set aside.

Now, add oil and stir fry eggplant, ginger, garlic and chili for 3 minutes.

Add sauce, stir well and simmer covered for 10 minutes. Open the lid, add the red pepper and cook, stirring for further 2 minutes.

Sprinkle with sesame seeds and serve.
