1 medium eggplant, pierced
Bake eggplant at 400° for about 40 minutes or until soft. Peel and mash.
2 eggs, slightly beaten
1/2 cup soft bread crumbs
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 clove crushed garlic
1/2 teaspoon chili powder
1 cup grated cheddar cheese
2 tablespoons grated parmesan cheese
Grease an 8-inch-square pan. Combine eggplant, eggs, bread crumbs, lemon juice, salt, pepper, garlic, chili powder and cheddar cheese. Spoon into pan. Sprinkle top with Parmesan cheese. Bake at 350° for 25 to 30 minutes until firm in center.
This recipe was delicious and easy to make. The only thing I was disappointed in was that I didn't see any nutrient values posted for this or any other recipe on this web site.
