Roasted Vegetable Kugel

12 ounces (about 5 cups) rotini noodles
1 jar (30 ounces) all-natural spaghetti sauce
3 1/2 cups cold water
2 eggs
2 teaspoons lemon-pepper seasoning
1 cup shredded fresh basil
olive oil
1 1/2 to 2 pounds grilled vegetables (peppers, eggplant, zucchini, etc.)

Preheat oven to 350 degrees.

Grease a 9-by-13-inch baking dish or spray with nonstick spray. Spread noodles over bottom of baking dish. In large bowl, mix spaghetti sauce, water, eggs, lemon pepper and basil. Pour over noodles. Stir to mix. Cover tightly with aluminum foil. Bake in preheated oven 1 hour. Remove foil; cover with grilled vegetables. Cook 15 minutes more. Serve warm. Makes six servings.
